- Every year we travel to Yakima, Washington, to choose the Citra and Mosaic we’ll use for the next year. We select lots that deliver flavor peaks in target sensory areas: lemon-lime and red fruit for Citra; blueberry, spruce goop, and tropical musk for Mosaic.
